Just the other day I tried "unsweetened stewed rhubarb in a sugar free jelly" (jello). Boy was it good. The lady who had made it said she just boils her rhubarb (no specific quantities given) in a small amount of water until soft, without sweetening it, and then when its done she adds a packet of weight watchers or sugarfree jelly DRY (usually strawberry) and stirs it through, then leaves it to set - it gives the jelly a wee bit of tang and a lot more substance.
I love strawberry rhubarb pie. This sounds yummy, too. I will have to give it a shot once rhubarb is back in season here. Thanks for the yummy tip. Jamie
