I have an online friend whose daughter has celiac (but not diabetes). I met her through a non-diabetes related parent forum I have been on for years. She posted this recipe and I thought I would share it here since we have kids with celiac. 2 cups peanut butter 2 cups sugar 2 eggs Mix it all up with a good quality mixer (because it gets thicks). Roll into balls. Flatten with a fork on a cookie sheet. Bake at 350 for 10 minutes. Let cool on rack. Eat!
