I found this photo on Pinterest and thought I could easily make this low carb so my DS can enjoy too! I do not have the exact recipe, but, simply bake low carb brownies, use a small cookie cutter to cut the brownies out then top with cream cheese frosting, strawberry and a little swirl of cream cheese on top. Not sure how many carbs would be in these bite sized, super cute, dessert...but I don't think it would be much. Just wanted to pass this along to anyone else who might want to try this too! EDITED: Found the low carb recipes for the brownies and the cream cheese frosting. I added them in the next post.
Low Carb Cream Cheese Frosting: 3/4 cup heavy cream chilled 8 oz. cream cheese, softened 1/2 cup Splenda 1 t vanilla Whip the cream until stiff. In a separate bowll, beat the cream cheese until very smooth, then beat in the Splenda and vanilla. Turn the mixer to its lowest speed and blend in the whipped cream, then turn off the mixer, quick! 3 grams carbs per serving, 9 servings total for entire batch. ==================================================== Low Carb Brownies: 1 Tbsp. Oil 1 Stick Butter 1 1/2 C. Splenda 1 tsp. Vanilla Extract 2 Eggs 1/3 C. Cocoa 1/2 C. Vanilla Protein Powder 1/4 tsp. baking powder 1/8 tsp. salt 1/4 C. Milk Heat oven to 350 degrees. Grease 8"x8" pan. Melt Butter. Add Splenda and vanilla. Add eggs and beat with a spoon. Add cocoa. Add protein powder, baking powder and salt. Mix well. Add oil and milk. Mix well. Put in baking dish. Bake 20 or unil toothpick comes out clean. 5 grams carbs per brownie, 9 brownies total for entire batch ==================================================== Not sure how many carbs this would be per brownie bite, but at least this gives a good start on how to make these low carb treats.
I think I will try making the brownies in a mini muffin pan and then just divide the total carbs by the amount of mini-brownies (I'm guessing that there is 45 carbs total in the batch??). Also, what is vanilla protein powder?
It's the vanilla protein shake powder. You can find it with all the energy bars, fitness section of your local grocery store. I was thinking of doing the brownies in a mini muffin pan as well and divide by 72 (total number of carbs for entire recipe (brownies and cream cheese frosting). The kiddos are going to LOVE this! I'm thinking I can probably make 24 santa hat brownies which would be about 3 carbs a piece.
