Does anyone know of a good gf cookbook for diabetics? Most of what I'm finding calls for rice or rice flour both of which are notoriously hard to manage from the diabetic perspective I will sincerely appreciate any recommendations!
Long time, no see my friend. :cwds: I don't have any that I use but I'm sure I have a few that were gifted to me. What is it that you are looking for specifically? Baking? Desserts? Breads? Hope you and yours are well. -swellman
Have your tried any recipes with either almond flour or coconut flour? http://www.elanaspantry.com/ has a lot of almond flour recipes--I believe she wrote a whole cookbook devoted to almond flour. I also have substituted about 1/4 of the rice flour in a recipe with almond flour to reduce carbs/spikes without sacrificing much. Paleo recipes are often made with coconut flour. I haven't experimented with it much myself, so I have no tips for you there. For some reason, I don't notice as much of an issue with rice flour spikes in my kids as I do with plain rice.
