    Does anyone know of a good gf cookbook for diabetics? Most of what I'm finding calls for rice or rice flour both of which are notoriously hard to manage from the diabetic perspective

    I will sincerely appreciate any recommendations!

    I don't have any that I use but I'm sure I have a few that were gifted to me.

    What is it that you are looking for specifically? Baking? Desserts? Breads?

    Have your tried any recipes with either almond flour or coconut flour?

    http://www.elanaspantry.com/ has a lot of almond flour recipes--I believe she wrote a whole cookbook devoted to almond flour. I also have substituted about 1/4 of the rice flour in a recipe with almond flour to reduce carbs/spikes without sacrificing much.

    Paleo recipes are often made with coconut flour. I haven't experimented with it much myself, so I have no tips for you there. :)

    For some reason, I don't notice as much of an issue with rice flour spikes in my kids as I do with plain rice.
