Really good recipe!!!

    Hi, i'm Abbie and i found an awesome recipe!!
    the recipe is for peppermint meringues.
    >3 egg whites
    > 1/8 peppermint extract
    > 5 drops red food coloring
    > 1/2 cup very fine sugar
    > 6 sugar free peppermints, crushed

    * preheat oven to 200 degrees
    * beat egg whites in mediumm bowl with mixer till frothy. beat in extract and food coloring. add sugar while mixer is running.
    * drop meringue by teaspoons into 1 inch mounds sprinkle crushed candie
    * bake two hours
    Makes 74 cookies
    2 carbs per meringue

    My daughter LOVES meringues and lived on homemade ones with splenda in the first few months...but they kind of had the consistency of marshmallows after a time. I'll make these for her when she's back for the winter break!! Do they stay crispy?? :D

    glad you liked the recipe! they usually stay crispy if not refrigerated. hope you think they taste as good as i do!:)
