Kale Soup

    Olive Garden has this soup on their menu, but I can't remember what it's called.

    1 pckage spicy italian sausage
    5-8 red potatoes, sliced 1/2" thick
    1 head of Kale (chopped finely)
    2 32-oz. boxes of chicken stock
    Lemon juice

    Remove sausage from casings and brown, add Kale, add potatoes, add Chicken Stock...simmer until potatoes are done. Finish with juice of 1/2 or 1 lemon (depending on your tastes)...and add about 1/2 cup of cream.

    Make it vegetarian by subsituting 2 cans of white beans for the sausage and vegetable stock for the chicken stock.

    that sounds good, but lemon and sausage? I'm going to try it.

    I would even take the greens and sausage out, mix the soup and put the kale and sausage back in. I make something similar. It is very good.
    You can susbtitute the sausage with soya sausages:rolleyes: or put nothing at all.
