Gingerbread ( a light recipe)

    9 servings
    28 carbs per serving
    163 calories per serving (not including any topping, though)

    Oven 350 degrees F
    Bake 20 minutes or until toothpick is clean

    8 X 8 X 2 inch pan; coat with cooking spray

    1.5 C all purpose flour
    1/4 C. sugar
    1 t. ground ginger
    1 t. ground cinnamon
    1/2 t. baking soda
    1/2 t. baking powder
    1/4 t. salt
    1/2 C. water
    1/3 C. full flavor molasses
    3 T. melted butter or margarine
    2 egg whites or 1 egg

    Frozen light whipped dessert topping (thawed) optional**or whipped cream:D

    In a large mixing bowl combine the flour, sugar, spices, baking powder and soda, and salt. Add, the water, molasses, butter, and egg. Beat with an electric mixer on low to medium speed for 2 minutes. Spread into pan.

    Bake 20 minuters or until a wooden toothpick inserted into the center comes out clean. Cool on wire rack for 10 minutes. Serve warm with whipped topping or whipped cream, if desired.
