After many failed recipes and mixes
, I have finally found a "Goldfish" cracker recipe that my entire family loves . This has been a personal challenge because since being dx'd with Celiac Goldfish is the only thing Nat has cried about not being able to have.![]() Anyway - someone at Glutino sent me the recipe. Of course, you can use it to make regular crackers. 3oz sharp cheddar -shredded 3oz Gruyere cheese - shredded 3/4 c gf flour (I used Domata.) 1/4 tsp each dry mustard and Kosher salt 1/8 tsp each cayenne and black pepper 4 Tbsp butter softened 2-3 Tbsp water (may need more) Put cheese and all dry ingredients in food processor. Pulse a few times to blend. Add butter 1 Tbsp at a time, pulsing between each until the mixture is the consistency of very small peas. Add water 1 Tbsp at a time, pulse just until dough holds together when pinched between fingers. If still too crumbly, add more water 1 tsp at a time. *Wrap dough in plastic wrap and chill for 2 hours or longer. Then roll out and cut. Put on baking sheet and bake 8-10 minutes at 375 degrees. *If you want round crackers, roll into a log before chilling. Then slice into 1/4" slices before baking.

Carol:
This recipe was excellent. My wife has been working diligently on new recipes over the past month. This one was a major success. Our 7 year-old daughter was so excited after she tasted the goldfish! Goldfish were her favorite snackfood before we ripped them out of our diet a month ago. She and we are very excited. Our next goldfish challenge will be how to estimate the carbohydrates. Thank you again for this recipe! |
