Other like-minded recipes appear in "The New Glucose Revolution: Low GI Gluten-Free Eating Made Easy: The Essential Guide to the Glycemic Index and Gluten-Free Living" by Dr. Jennie Brand Miller. Low GI meals typically include one-third protein, one-third carbohydrates and one-third vegetables. The book includes recipes ranging from peachy pistachio porridge and cherry chocolate muffins for breakfast and/or brunch, chicken mango rice paper rolls for lunch and lamb curry with Spanish rice pilaf for dinner. For diabetics watching their carbohydrates or those with celiac disease who cannot eat grains like whole wheat, this book is especially helpful in suggesting alternatives to high-glycemic foods such as white rice that are often the main ingredients in gluten-free baking mixes and baked goods. Quinoa, a gluten-free grain packed with protein and fiber, is an excellent option that appears in several recipes. I just looked at our online library catalog and they have this but it's not the GF edition. I'm going check it out -- I am VERY curious about how to make a chocolate cake with lentils
And I am crazy enough to make it and serve it to my kids

As a kid, my mother's friend used to make a chocolate mashed potato cake (the potatoes tasted like fudge).

My mom used to make GF brownies that have instant mashed potato flakes in them instead of flour. Probably very similar to your friends cake. I'll have to post the recipie to that later today. I LOVE the brownies
