Just thought I'd share this...I bought an ice cream maker recently to experiment controlling carbs for dessert. It has worked great for my two year old. I am able to make ice cream that is just around 7-8 gms and the cone adds another 4 gms. For that once-in-a-while ice cream that we take her to baskin robbins to, we can now do this at home. At BR, I usually ask for a baby scoop of the soft serve, but they make them so sweet.
Also, I tell her the previous day that we are going to have ice cream the next day. She enjoys the wait too which adds to the experience. And watching the ice cream maker is fun. She hates fruit, so I can mix some berries in and she won't notice. Next, I might add vitamins as well, maybe a dash of cinnamon, a little bit of agave... We also try to give her goat milk instead of cow's milk as it is supposed to be easy on the stomach. So, her ice cream is also made from goat milk! Lots of possibilities! ![]() The one obvious downside is that we might have ice cream more frequently but that has not been a problem. Instead we no longer dread driving by BR which is close to our home!

We've figured out a good lemon ice/sherbet with goat's milk kefir, lemon, eggs, and stevia. Our other recipe is coconut milk, strawberries (ground up while frozen) and stevia. Healthy and lower carb!

We haven't made any ice cream...but I was curious if anyone has tried using almond milk? Does goat milk taste like goat cheese?

We have a kiddo allergic to milk & my sister tried this.
Take a over ripe banana cut it into coins and freeze them. Whip in a food processor until they are creamy. It makes a non milk ice cream and is tasty. Can flavor with vanilla or other extract flavors.

Yes, I use almond milk as well to reduce carbs. Goat milk has a particular taste to it thats not for everyone. Trader joes carries goat milk and goat yogurt.

Has anyone tried making ice cream with rice milk or soy milk?
My son is allergic to milk and nuts (so no almond milk).

We used to make ice cream using the Soy Shake brand until we discovered we were also allergic to soy. It was really good!
