Ben and his younger brother Benaiah are off to children's camp with our church. without me or dad. A nurse from our church is going and I talked to her at length. She has a clue, and has taken care of a couple other kids with D before.
Until she talked with my husband a few weeks ago, we weren't even considering the boys going, then we said we would like for them to go but hadn't budgeted for it so didn't have the $$, well last minute someone donated money for scholarships and they get to go.
I got a copy of the menu for the week-end (others in our church have dietary restrictions) and have looked up carb counts and have written them down for everything on the menu. (with a lot of quess work) I've also written a detailed note about his care with everything I can think of, packed extras of everything, now to say a prayer and kiss him good-bye for 4 days.

How on earth do you figure carb counts on chicken and dumplings when you have no idea what type or size of dumplings?

Have you bought a scale?
We have two Salter Scales, one for home and one for travel.

We weigh EVERYTHING. You wouldn't believe the difference between a 1/2 cup of ice cream or weighing it. If you notice on the nutritional information graph on products by serving size it usually has a weight in parentheses. That weight listed is equal to how many carbs are listed on the package. It works wonderful for fruit, ahhhh heck it's just wonderful for everything. I don't give my daughter a meal without it. AND I haven't checked if chicken dumpling is listed in the memory- but their are thousands of foods already stored into the scale with nutritional information. It gives you not only the carbs, but calories, protein and so forth.

My opinion is to have your son take the scale with him to camp. It's a little spendy, but you'll get your money's worth.
