Long story, but I was given my great grandmother's old fashioned manual meat grinder and decided to try it out. I ground up some chicken breasts yesterday and was thrilled with the results. I had no idea it would be so easy and yummy to make chicken sausage. Here's the recipe I used. http://www.ehow.com/how_2289546_make-chicken-sausage.html
You don't have to grind your own meat, you could buy ground chicken in the store.
I just made 1 1/2 pounds of sausage patties and my kids are really happy with it! SOOOOOO much better for you than regular italian sausage. Carson always gets a super bad fat spike from it -- and this recipe is so low fat there's no way he could get a fat spike!
I'm really excited about the meat grinder, too! I buy chicken breasts on sale for 1/2 the price of ground turkey/chicken.
