This is a recipe that all our family enjoys. Some things may have unfamiliar names because we're in New Zealand :D, but they should still taste good. You can also use veal schnitzel or lean rump steak for the base.
4 x 150gm chicken breasts (no skin)
1/2 cup lean diced ham
1/2 cup thinly sliced mushrooms
1/2 cup thinly sliced capsicum
1/2 cup chopped shallots or thinly sliced onion
1/2 cup diced tomato
1 tsp crushed garlic
1/2 tsp basil
4 dessertspoons tomato paste
1 cup grated light mozzarella cheese.
preheat oven to 180 C
Flatten the chicken breasts with meat mallet. In a medium sized mixing bowl mix together all the vegetables, herbs and ham.
Place the flattened chicken breasts on a baking tray and spread them with tomato paste. Spread the pizza toppings evenly over the chicken. Sprinkle 1/4 cup cheese on each. Bake 30-40 mins or until the chicken is cooked and the topping golden.
