Maybe it's the 0 deg temps:eek: and being stuck in the house with 4 kids with cabin fever :eek::eek:for days on end, but I need something new & yummy to cook. I'm tired of the same old recipes. Throw some ideas my way! What's for dinner at your house?

The other day I made a pot roast - slow and low...it was delicious! then the next day i took the left over meat, gravy, potatoes and carrots...added some green beans and a little more beef broth and viola beef stew! I baked some biscuits and put the stew over them.....it was the best 2 dinners we've had in a while. Stew went perfectly with the cold weather.

1pkg frozen peas
1pkg frozen corn
2 large cans cream of mushroom soup
1 can milk
1/4-1/2pkg sliced american cheese (depends on how much you like cheese)
cooked diced chicken

Mix all together and heat til cheese is melted and vegis are cooked.
Bake some bisquits and spoon mixture over bisquits.
You can add more vegi's if you like.
My kids love this.

chicken wraps with bacon, cheese, choice of condiments and veggies.
Slightly heated up to melt the cheese.
mixed veggies for us to go with it and raw peppers and some cut up apple.
long day here so nothing special.

"taco bell" ;) nachos:

baked nacho chips, restaurant style
light (or try to find lower-fat) mild salsa con queso
lean ground beef, turkey or chicken
fat-free refried beans
1 coarsely chopped plum tomato
1 chopped green onion
sour cream
2 tbsp. taco seasoning mix and 1/2-3/4 cup hot water

Brown the ground beef, drain and add the seasoning mix and water. Cook until thickened, then add the refried beans. Stir until heated through and well combined. Heat the queso in the microwave until hot (or warm depending on who's eating it). Arrange the chips on a plate, top with beef mixture, then cheese, tomato, green onion and sour cream.

I serve nachos with a mango dessert (if I can find them ripe, otherwise, I use bananas):
1 or 2 mangoes, cubed (or you could use apples, bananas, strawberries, etc.)
walnuts, coconut, grape nuts or any other crunchy "topping" you have on hand, m+m's, etc.
6oz carton of vanilla yogurt
3oz cream cheese, softened
2tbsp splenda
1-3 tbsp of milk (optional)

With a mixer, combine the yogurt with the cream cheese and splenda. Add milk if necessary to thin the mixture to make it go further. Toss the mangoes in the yogurt mixture and top with whatever topping you have. It's especially good with the walnuts.

Easy Vegetable soup
Quick & easy on a cold day- can keep ingredients on hand


1 big can V8 Juice
1 can corn beef- mashed up
1 can corn, drained
1 can mixed vegetables, drained
1 can diced potatoes, drained


dump in crock pot & cook for several hours on HI.
you can mix & match vegetables in any combination you want.
It become more like a stew if you add more vegetables.

Chicken Noodle Soup for dinner here. It's easy and yummy, and never any complaints! ;)

Tonight I made Grain Mustard crusted Beef Tenderloin, French Green Beans and Cauliflower Puree (instead of Mashed Potatoes...yum-o!)

Tring to cut back on carbs for DH and I in an effort to slim down. I love my carbs...bread and especially Pringles chips, so we are cutting out some to keep some of our fav snacks around :p

No help here...we had meatloaf, mashed potatoes and green beans. I wasn't feeling very imaginative and haven't been to the grocery store.

Homemade chicken noodle soup here. I like my chicken chunks big enough to see and chew.

Fajitas here tonight.

I like to do the breakfast for dinner option...quiche or scrambled eggs, bacon, toast or english muffins. I do that a lot when my husband is out of town. The kids always like it.

Lasagna is a good one for cold days.

Hopefully it will warm up there before this weekend's big game!...for which I'd recommend chili. (I'm going to PM you)

I was just thinking about the meatloaf; Saturday night is definitely going to be hot meatloaf sandwiches on fresh bread with gravy & homefries, yum! My dad used to take me to a local diner when I was little, they had the best meatloaf & gravy sandwiches.

Working on the next couple of days menu's right now. All this food talk is making me hungry- off to raid the fridge:o

I have no idea, either chili and hotdogs, breakfast(omelettes, toast and hashbrowns) or tacos. Kylee has a friend staying tonight, so I will let them pick.

baking chicken fingers, breaded with bisquik...all spiced up. My son will then coat them with Frank's Hot sauce, my daughter will dipped hers in ketchup. I also made homemade cinnamon bread drizzled with glaze and finally did something with the rotting banana's...banana bread. For me, broil some portabella mushrooms and a nice salad. I gotta get OUT OF THIS HOUSE!

Last night I made these "mummy's" which I saw in a halloween cookbook.

Took a baked potato (which I just washed and stuck in the crock pot, nothing else) cut it when done and scooped out the potato. Put meatballs in the potato boat, little bit of bbq sauce and some cheese on top. YOu can add "eyes" if you want. Mashed up the potatoes and it was pretty yummy.

I have to say that Andee's cauliflower mashed potatoes are a big hit here. My kids "hate" cauliflower, but when I puree it, they don't know;)
