View Full Version : Quick Chicken Cordon Bleu

I got this recipe out of simple, and delicious magazine. One of my requirments with food is that most meals are quick. Being a mom is busy enough on it's own, if you add kids with disabilities it gets even more busy. This is Yummy, and takes less then 1/2 hr. Use low fat cheese, and ham if you wish, or uncoated, or a different type if you want, or need to.

4 boneless skinless chicken breasts
4 thin slices deli ham
2 slices swiss cheese
1/4 C butter, melted
1 envelope seasoned coating mix

Flatten chicken to 1/4" thickness.
Place ham, and cheese down the center of each.
Roll up, and secure with toothpicks.
Place butter ( I used 2 Tablespoons of sesame oil) and coating in two sepperate bowls. Dip Chicken into the butter, then into the coating mix.
Place in greased 2 qt microwavable dish. Cover loosely and microwave on high for 5-7 minutes. Turn chicken over, cook for 5-6 minutes longer, or until juices run clear. Let stand for 5 minutes. Discard toothpicks.

* I didn't cook mine in the microwave. I used the oven, baked it on a cookie sheet sprayed with pam. I baked it at 425 for about 12 minutes, and flipped it after about 6.

I clearly don't follow recipes very well :rolleyes: :p
