1. I'll be hangin out around Knoxville all day (too far to drive home). Anyone want to meet up for lunch one day?

2. I just got the camp info and noticed the only day that MAY be gluten-free is Wed. We have just started dealing with celiac, and I freely admit to being overwhelmed right now. We are also staying at a hotel for the week (My husband will be there on business, so Nat and I are free-loading:)), so it will be difficult to make something to send. What are you planning to do? Do you just send a replacement for the problem food and let them eat the rest of the planned meal? Do you consider everything to be contaminated and just send a complete lunch? Do we need to send GF snacks? ARGHHHH!! I guess I just thought they would be more prepared for celiac kids, but I'm sure everything is dependent upon donations.
Thanks for any info!

Carol-

This is our first year of camp since going GF, so I was little caught off guard by the food situation as well. I will probably send an alternative for things that Braden can't have, but you have to decide your comfort level on cross contamination. They usually have fruit as a snack option (grapes, half banana, etc.). They also have rice krispy treats and such, so if you think she may prefer this for a snack, then maybe send an Envirokids bar for her?

As for the meals, I will probably come up with a complete meal for the taco bar, as I don't trust that at all. I will probably send a sandwich for sandwich day, but let him eat the chips(gambling there will be some he can eat), fruits, and veggies there. On pizza day, I will let him eat completely at camp if the pizza is GF. If they use either a frozen GF pizza or a fresh pizza from Roman's Pizza in West Knoxville, I am comfortable with both. The owner of Roman's Pizza is very knowledgeable of Celiac. As for Chik-fil-A, I don't understand why they don't just ask for a few grilled nuggets to be donated as well, since they are GF. Anyway, I will probably send something and let him eat their fruit/veggies. I am going to try to research O'Charley's on Friday. If I feel comfortable with the hamburger meat, then I will just bring a bun and let him eat the rest there.

Again, I am not recommending this for anyone else. Each person has to decide how comfortable they are with cross contamination issues.

BTW, I would love to meet for lunch one day! I am just hoping I make it through the camp week without the baby coming early! I usually shop and have "me" time for this one week since it is too far for me to drive back home and back to camp each day as well. I may be doing more movies and less shopping this time!

Thanks for the info. I just started reading through the menu and went to panic mode.

Maybe we could go to breakfast after dropping the kids off on Monday. PM me.

I wouldn't assume they don't have GF food for the kids that need it. I am part of a Diabetes Day camp here in Texas and we purchased separate GF snacks for the 9 campers (out of more than 200) who need gluten free food. We can't have all GF snacks, as that would be too expensive.

You ought to ask the director. Since the camp isn't for another couple of weeks (as far as I can tell), they ought to be able to accommodate you. You should tell the medical director any as this is important update to the medical information.

I know for a fact they can't help you unless you tell them.

Amy-

There is not any way for you to have known this from our posts, but we received our information packets in the mail yesterday and it specifically stated that other than possibly GF pizza one day, that they will not be able to provide any GF items at this time.

Whoa, that is not nice. There are more and more children dealing with celiac and diabetes. They ought to consider changing their tune.

Carol and Kristi -
I would love to join both or either of you. I work on Mondays and Wednesdays, so if you're available any of the other days that week, please let me know!

(I don't know about the GF foods issue.)
