Crepes or Swedish Pancakes

3 eggs
1 cup flour
1 1/4 cups milk
1/4 cup mineral water
1 T. sugar
1/2 t. salt

mix ingredients well
300 degree griddle
pour by 1/4 cup amounts onto griddle
We usually end up calculating these at approximately 9 carbs per crepe.

These are great with jam or fresh/canned fruit. Use your imagination for fillings. :)

PUMPKIN SWEDISH PANCAKES

3 eggs
1 cup flour
3/4 cup milk
1/2 cup solid pack pumpkin
1/4 cup mineral water
1 T. sugar
1/2 t. salt
**I add a 4-6 packets of Splenda to this recipe and then we don't use any syrup at all** the Splenda is optional**

mix ingredients well
300 degree griddle
pour by 1/4 cup amounts onto griddle

Looks yummy, I have always wondered how crepes are made. Thanks a bunch for the recipe.

Thanks! My kids love them, and so does our whole family. I have even been known to make whipped cream (I add splenda for sweetness) and sometimes a bit of cinnamon for cinnamon whipped cream.

One tip is to spread out the batter slightly when you pour it on the grill.
