Generous 3/4 cup mashed banana
scant 1/2 tsp cinnamon
1/3 cup vegetable oil
scant 1/2 tsp nutmeg
4 egg whites or 2 extra large eggs
1 cup chopped nuts (optional)
1/2 cup water
Generous 1 tsp baking soda
2 cups all purpose flour
Generous 2 1/4 tsp baking powder
Preheat the oven to 325 degrees.
coat a 9x1x2 1/2 inch loaf pan with oil
In a large bowl whip together banana , egg, oil and water by hand.
Add flour, cinnamon, nutmeg and nuts, blend well. Stir in baking soda and powder quickly in about 28 to 30 strokes and pour into pan immediately to cook.
Bake 45 - 55 min. and turn out on a rack to cool.
1 slice = 143 calories, 3.1 g protein, 6.3 g fat, 18.2 g. carbohydrate.
