I adapted these from a recipe at Foodgeeks.com. Man loved them, as did my whole family even the teenagers. Had two mornings in a row with a little peanut butter spread on top, milk and apple slices. Did not see a breakfast spike. FYI: I do not deduct for fiber.
Banana Wheat Bran Chocolate Chip Muffins
Total Carbs: 32.6 each
1 cup unprocessed bran
1 cup mashed (over ripe) bananas (4)
3/4 cup plus 2 tbsp. milk (1%)
1/4 cup brown sugar
1/4 cup oil (canola is best)
1 egg
1-1/2 cups whole wheat flour
1 tbsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
180g chocolate chips (weighed)
In a large bowl combine bran, mashed banana, and milk, stirring well. Let stand 5 minutes then add brown sugar, oil, and egg and mix well. In another bowl, combine flour, baking powder, and cinnamon. Stir into the bran mixture until just combined. Fold in chocolate chips. Spoon into 12 greased or paper lined muffin tins. Bake at 375°F for 20 minutes.
I wonder if you could use Flax for the bran?
