We just got in from soccer practise and it is ffffrrreeeezzzzing out there so the kids asked for hot chocolate.
I made it for Em for under 10 carbs for a mug.
1 cup almond milk 3 carbs
1 packet stevia 0 carbs
1 tbsp cocoa 3 carbs
5 chocolate chips (roughly 3-4 carbs max) - this was mostly for effect - she loves to stir them in and it feels like such a treat.
1/4 tsp vanilla extract.
Heat milk in a pot, add cocoa, vanilla and stevia and whisk until well combined.
This is the first time I have used almond milk for hot chocolate and it was a hit. And I found the cocoa got incorporated into the almond milk much easier than when I have made this using cow's milk.
I even had a mug myself it was so good.
