My dd spikes so high after pancakes and waffles. I was hoping to find a recipe with more fiber. Anyone tried soy flour for added protein? Someone recommended it. THANKS
Here's our newest pancake recipe. DD doesn't seem to spike after eating them--but she doesn't use syrup, so I don't know how that affects the mix.
1 1/2 c cornmeal
1/4 c sugar
1 tsp salt
1 tsp soda
1 cup milk
2 eggs
4 tbs oil
Carb factor of .42 per gram.
We usually serve them with butter and apple sauce.

I made this one the other day, and Kelton being as picky as he is about trying new things loved them.
Ingredients
2 cups whole wheat flour
1 tablespoon oil
2 tablespoons honey
1 tablespoon baking powder
2 egg
2 cups milk
Combine all ingredients in a large bowl. Whisk until smooth.
Pour by 1/4-cupfuls onto greased griddle or frying pan.
When bubbles begin to appear on top, flip.
Cook until they spring back when touched.
Total Carbohydrate 47.1g
makes 6 waffles
2 eggs
2tbsp veg oil
1c wholewheat flour
1 1/2 tsp baking powder
1 1/2 tsp sugar
1/2 tsp salt
16.08 carbs per each of 6

I got this one from an online friend.
According to the online carb calculator I use there are 180 total carbs in the recipe using my substitutions.
Robin's Non-Empty Pancakes
1 cup milk (I use almond milk to drop the carbs)
1 cup yogurt
1 1/2 cup whole grain flour
1/4 Cup Ground Flax Meal
1/4 Cup Hemp Seeds
If you have time, mix everything above together and let it soak in the fridge for 12 - 24 hours to ferment a little bit.
Then mix in:
6 eggs
4 Tbs coconut oil or butter
1 tsp Vanilla
1/2 tsp stevia
1 tsp sea salt
You can add protein powder in - I add it with the eggs. I also usually add blueberries or raspberries but they aren't included in the carb count.
These are dense pancakes - they are pretty filling so your kids may not want as many as with typical pancakes. They freeze well if you have extras. Just reheat in the toaster.
