My 12-yr-old dd definitely reacts to milk. We even buy her the low-carb "milk" we've found. I don't know, but it MAY be the milk in the ice cream. As they say, YDMV . . . milk is super-tricky in our house. I'd LOVE to give my daughter ice cream, but I think we may have to stick with sugar-free popsicles. So, my plan thus far is that her brother will not have much ice cream either. This will be our first summer with diabetes, so we're in for MORE learning experiences, I'm sure. The South Carolina weather will probably make it interesting.

Probably a fat spike. The number of carbs won't help if you have ice cream that's high in fat. I avoid high fat ice cream, or any high fat dairy products for Elizabeth. Try a low fat version, or frozen yogurt. That being said, if you have a child that runs very low during the night, and drops 100 points or more, high fat ice cream helps as a bedtime snack. Hagan Daz Vanilla is deadly (but so yummy).

We've noticed that Kats BS react to anything with fat in it, it keeps her high for longer (doesnt raise the BS like carbs do, but keeps it up). Whole mik has 100% milk fat, 2% is better for Kat and 1% is even better and she doesnt care about the taste. Is there ice cream out there made of low-fat milk, or do we just make our own? We cover how much is on the plastic tub of ice cream, measure it out according to how many carbs is listed on the nutrition info.
