View Full Version : GF Dinner rolls recipe

It is very rare that I find something GF that I love enough to share the recipe. I was so excited when I made these and my DD absolutely LOVED them. I haven't seen her enjoy bread this much since diagnoses. So I wanted to share. :D


Gluten-Free Dinner Rolls


4 tablespoons shortening
3 tablespoons honey
2 eggs
1 packet yeast (about 1 T)
1 cup sour cream
1/2 cup potato starch
1 cup cornstarch
1/2 teaspoon baking soda
1 tablespoon baking powder
2 teaspoons xanthan gum
3/4 teaspoon salt
3/4 teaspoon vinegar

Preheat oven to 350 degrees F.
Combine all ingredients.
Mix well to remove all lumps.
The dough will be quite wet.
Wet hands to handle dough.
(Re-wet hands as needed.) Take about 1/4 cup of dough and shape into a ball.
Drop into greased baking tin.
(I used a muffin pan).
Repeat until all dough is used.
Bake 18-20 minutes, until toothpick inserted in middle tests clean.

How funny -- I made this recipie almost exactly for the first time tonight -- and I'm just now reading this post!! The only difference was plain yogurt instead of sour cream and I think it was 1 1/2 cups cornstarch.

The recipie I used was under Bread Sticks in The Gluten Free Kitchen by Robin Ryberg. She says to put the dough in a piping bag and spread them into breadstick shapes. Or put them in a baggie with the tip cut off and pipe them. My problem was that I cut the baggie hole too big and they were more like bread loafs instead of bread sticks.

But they were SOOOO good!! I'm going to use your way of baking them in muffin tins the next time, it sounds a lot easier.

I'll try your way too! Thanks for the idea. I'm trying to think of other ways to change it around like maybe adding shredded cheddar to make cheese bread. Worth a try and she'd like them as breadsticks!:D

These are from a Bette Hagman bread recipe (http://forums.glutenfree.com/topic5799.html) using a large muffin pan filled 1/2 full.

I had them for Christmas dinner. I was very pleased with their taste and texture.

I will say they do have a slightly sweet taste to them. You may have to modify the recipe for your dietary needs due to the sugar content.
